Recipe: Banana Butterscotch Boat

The hot banana butterscotch topping makes this a truly memorable ice cream dessert

Ingredients:

  • 2 bananas
  • 3 tablespoons granulated sugar
  • 1 tablespoon seedless raisins
  • 1 orange
  • 2 oz. (50g) butter
  • 1 tablespoon seedless raisins
  • small pack (11fl. oz.) vanilla ice cream
  • a few seedless green grapes
  • Cooking Instructions:

    1. Grate the rind of the orange and squeeze the juice
    2. Cut the grapes in half
    3. Place the sugar in a small saucepan with 3 tablespoons of cold water
    4. Heat gently until the sugar has dissolved, then increase the heat and boil rapidly for about 3 minutes or until a light golden colour
    5. Remove from the heat
    6. Beat in the butter, piece by piece and stir in the orange juice and rind as well as the raisins
    7. If the sauce separates, heat for a few minutes
    8. Peel the bananas and cut into slices, then add to the sauce with the grapes
    9. Arrange slices of ice cream overlapping on a serving dish then pour over the sauce
    10. Serve immediately
