Mushroom Rarebit

Serves 4

Description/Notes:

Savoury mushrooms and a tasty cheese sauce on toast

Ingredients:
  • 1 lb. (450g) mushrooms, sliced
  • 2 oz. (50g) butter
  • 1 tablespoon tomato puree
  • 2 tablespoons of water
  • 2 tablespoons grated Parmesan cheese
  • 4 slices buttered toast

    Cooking Instructions:
    1. Sauté the mushrooms in the butter slowly for about 10 minutes
    2. Add salt , pepper and the tomato puree mixed with the water
    3. Add the cheese and continue cooking for a further 10 minutes
    4. Serve on hot, buttered toast
