Hot Potato Eggs

Serves 4


Make sure you hide the recipe for this impressive savoury egg and potato dish from your envious guests

  • 4 hard boiled eggs
  • 8 oz. (225g) cooked potatoes
  • half an ounce (12g) butter
  • 1 egg yolk
  • 1 teaspoon of chopped parsley
  • half a level tespoon of salt
  • quarter level teaspoon grated nutmeg
  • 1 oz. (25g) grated cheese
  • egg and breadcrumbs
  • vegetable oil for deep frying
  • a little flour for coating eggs

    Cooking Instructions:
    1. Mix the potatoes with the egg yolk and butter
    2. Add parsley, salt, nutmeg and cheese
    3. Divide into 4 portions and coat the hard boiled eggs
    4. Roll in flour, then coat with egg and breadcrumbs
    5. Deep-fry for 3-4 minutes or until crisp and golden
    6. Serve hot with a salad
