Fresh Mushroom Hors-d'ouvre


An attractive and quickly made vegetable hors-d'ouvre

  • 8 oz. (250g) button mushrooms
  • 3 tablespoons olive oil
  • salt and freshly ground black pepper
  • juice of one lemon
  • 1 level teaspoon chives, finely chopped
  • 2 level teaspoons fresh parsley, finely chopped

    Cooking Instructions:
    1. Rinse, but do not peel, the mushrooms and dry on absorbent kitchen paper
    2. Slice the mushrooms very thinly and place in a serving dish
    3. Make a dressing with the lemon juice, oil and seasoning and pour over the mushrooms
    4. leave as long as possible and just before serving sprinkle with the parsley and chives
