Try this palate pleasing accompaniment to your cold meat meal

Cooking Instructions:
- Pour the vinegar into a pan and add the pickling spice
- Bring to the boil then transfer to a heatproof glass basin and leave to cool for about an hour
- Peel the cucumber ,cut into half inch slices then quarter the slices
- Pour the vinegar through a strainer, to remove spices, back into a pan
- Add the sugar to the pan over heat and stir until the sugar dissolves
- Add the cucumber pieces to the pan, bring to the boil, then simmer for about 10 minutes or until the cucumber becomes almost transparent
- Remove pan from heat and transfer the cucumber pieces into warmed jars with a perforated spoon
- Carefully pour enough of the vinegar into each jar to cover the cucumber pieces
- Allow to cool the seal with a vinegar proof cover
