Serve this salad as an accompaniment to all barbecued meats, fish and chicken.

Cooking Instructions:
- Soak the beans overnight in cold water and the bicarbonate of soda
- The following day transfer the beans and the liquid into a large saucepan
- Add a quarter pint (125ml) cold water, bring to the boil and simmer gently for one and a half to two hours, making sure the beans do not break up
- Drain and put into a basin
- Cut off 2 slices of the onion for garnish and roughly chop the rest
- Place the garlic into a bowl and add the vinegar, oil, salt and pepper
- Mix well and pour over the hot beans before adding the chopped onions
- When the dish has cooled a little garnish with onion rings
