- Pre-heat oven to 400F, Gas Mark 6, 200C
- Peel and grate the onion into a bowl
- Add the chopped bacon, sausagemeat and a pinch of salt and pepper to the bowl
- Mix the flour and a pinch of salt in another bowl
- Rub in the lard and margarine to a crumb-like consistency
- Add water with a knife until dough forms
- Roll out the dough on a lightly floured board
- Use a three and a quarter inch (8 cm.) round cutter to cut out 12 rounds and line 12 tartlet or patty tins
- Cut out 12 smaller rounds with a two and three-quarter (7 cm.) round cutter for lids
- Divide the filling between the cases; damp edges, place lids on top and press edges
- Re-roll the trimmings to decorate
- Brush with beaten egg or milk to glaze
- Bake in the top half of the oven for 35 minutes
- Remove from tin and cool on a wire rack
