Luscious chicken portions with a tangy lemon glaze
Ingredients:
Cooking Instructions:
- Wipe the chicken portions and toss in the seasoned flour
- Melt the butter in a shallow baking dish which will take the chicken portions without overlapping
- Place the chicken portions skin-side down in the fat and cook just above the center of a moderate oven (350F, Gas Mark 4, 180C) for 25 minutes then turn and cook for a further 25 minutes
- Blend together all the other ingredients for the glaze
- Spoon the glaze over the chicken and continue to cook for a further 15 minutes, basting once during this time
- Test the chicken to make sure the flesh is tender
- Serve with a little of the glaze and a garnish of parsley
