Tender, lean lamb in a fruity curry sauce that is both delicious and healthy
Ingredients:
Cooking Instructions:
- Remove excess fat from lamb and cut into small cubes
- Mix the flour, curry powder, salt and pepper together and coat the lamb cubes with the mixture
- Heat the corn oil in a heavy based pan, add the onion and meat and fry until meat is browned
- Add the stock and bouquet garni and bring to the boil
- skim off any excess fat then pour into a casserole, adding the apple and sultanas
- Place in a pre heated oven, 350F, Gas Mark 4, 180C and cook for one and a quarter to one and a half hours
- Serve with plain boiled rice
