You’ll be keen as mustard on this delicious grilled fish

Cooking Instructions:
- Pre-heat the grill to medium hot
- Line the grillpan with foil
- With a sharp knife, cut the heads off the mackerel and make 3 deep cuts on each side of the fish
- Brush the mackerel with oil and place on the grillpan
- Place under the pre-heated grill and cook for about 5 minutes
- Blend the mustard with a few drops of vinegar then mix with the rest of the vinegar and the water
- Turn the mackerel over gently, pour the mustard sauce over it and cook for a further 5 minutes, or until the fish flakes easily, basting occasionally with the mustard sauce as it cooks
- Sprinkle with chives and garnish with sprigs of fresh parsley
