Delectable caramel squares with a heavenly meringue topping
Ingredients:
Cooking Instructions:
- Pre-heat oven to 325F, Gas Mark 3, 170C
- Cream together the butter and caster sugar
- Beat together 2 egg yolks and the white of one egg
- Add to the butter and sugar and beat well, then add the vanilla essence
- Blend in the sifted flour, salt and baking powder
- Spread the mixture in a greased baking tin to a thickness of about a quarter inch (6mm)
- Sprinkle with chopped nuts
- Beat the remaining egg white until stiff then add 3 oz. (75g) soft brown sugar
- Spread the meringue on top of the nuts
- Bake in the pre-heated oven for 20-25 minutes
- When cool gently cut into squares
