- Place the vegetables, apple, curry powder, lemon juice and tomato puree in a thick bottomed pan
- Simmer for about 10 minutes before adding the chicken breast
- Continue simmering for 30-40 minutes or until chicken breast is tender
- Serve on a bed of brown rice
