Banana Trifles

Serves 4-6


Tasty end to your perfect picnic lunch

  • 3-4 bananas
  • juice of half a lemon
  • 2 tablespoons of apricot jam
  • 1 Swiss roll
  • 1 oz. (25g) sugar
  • 3-4 tablespoons of sherry
  • half a pint of custard
  • glace cherries for decorating

    Cooking Instructions:
    1. Cut the Swiss roll into thin slices and place on the bottom of waxed picnic dishes
    2. Sprinkle each slice with a little sherry and spread with jam
    3. Peel and mash the bananas and mash with lemon juice and sugar
    4. Spread a layer over the jam
    5. Cover with another slice of Swiss roll, top with custard.
    6. Press down lightly and leave for a while for the sponge to absorb the custard
    7. When cold decorate with glace cherries
