Salmon Cole Slaw

Serves 4


Try it with fresh crusty bread, delicious

  • 17 oz. (500g) can of salmon
  • quarter of a small cucumber, peeled and diced
  • 3 tablespoons of salad cream
  • lemon juice
  • pepper and salt
  • 1 small firm Savoy cabbage
  • 2 hard boiled eggs
  • 2 medium tomatoes

    Cooking Instructions:
    1. Flake the salmon, add cucumber and salad cream
    2. Season with lemon juice, pepper and salt to taste
    3. Shred the cabbage and put in a serving dish
    4. Pile the fish on top and garnish with egg slices and wedges of tomato
