Recipe: Flamenco Flan

Introduce a taste of Spain with this delectable Mediterranean flan

Ingredients:

  • 6 oz. (175g) plain flour
  • one and a half ounces (40g) lard
  • one and a half ounces (40g) margarine
  • 1 large onion, chopped
  • 1 tablespoon corn oil
  • three and a half ounce (100g) can red peppers, drained
  • 8 oz. (225g) can tomatoes, drained
  • 8 oz. (225g) cooked potatoes, diced
  • 1 tablespoon cooked peas
  • 2 oz. (50g) ham, chopped
  • 2 large eggs
  • quarter pint of milk
  • 1 oz. (25g) Cheddar cheese, grated
  • Cooking Instructions:

    1. Pre-heat oven to 425F, Gas Mark 7, 225C
    2. Put the flour and a pinch of salt in a mixing bowl
    3. Rub in the lard and margarine, then mix to form a stiff dough with cold water
    4. Roll out the pastry on a floured surface to a round large enough to fit a 9 inch (23 cm.) flan dish
    5. Fry the onion in oil until soft.
    6. Chop the peppers and tomatoes, add to the onion and fry for a further 3 minutes
    7. Add the potatoes, peas and ham
    8. Whisk the eggs and milk together, then season with salt and pepper
    9. Put the onion mixture into the lined flan dish, pour in egg and milk, then sprinkle cheese on top
    10. Bake in the center of the pre-heated oven for 35-40 minutes
