Potato Eggs

Serves 4


Great vegetarian variation on the better known Scotch eggs

  • 4 hard boiled eggs
  • 12 oz. (350g) boiled potatoes
  • 3 oz. (75g) grated cheese
  • 2 eggs, beaten
  • cayenne pepper
  • breadcrumbs
  • flour for coating
  • oil or fat for frying

    Cooking Instructions:
    1. Mash the potatoes and season with salt and cayenne pepper
    2. Add the cheese and sufficient egg to form a fairly smooth paste
    3. Shell the hard boiled eggs and coat lightly with flour
    4. Divide the potato mixture into 4, flatten out each portion on a floured board and mould round the eggs, keeping the original shape
    5. Coat with the remaining beaten egg, roll in breadcrumbs and fry in deep fat for 5-7 minutes or till golden brown
