Prawn Patties

Makes 6-8


Yummy little pastries with a tangy prawn filling

  • 1 medium can of prawns
  • 2 oz. (50g) grated cheese
  • 1 teaspoon of lemon juice
  • pinch of freshly ground pepper
  • salt
  • 4 oz. (125g) short crust pastry
  • beaten egg to glaze

    Cooking Instructions:
    1. Pre-heat oven to 450F, Gas Mark 7
    2. Drain the prawns and mash well
    3. Add the cheese, lemon juice, pepper and a little salt
    4. If necessary add a little juice from the can as the mixture should be fairly moist
    5. Roll out the pastry thinly and cut into 6-8 rounds
    6. Divide the fish mixture between the pastry rounds
    7. Damp the pastry edges, fold over and press well together
    8. Put the patties on a baking tray and glaze with the beaten egg
    9. Bake in the pre-heated oven for about 25 minutes
