Ham and Egg Cake

Makes 2-4


Enjoy the flavour of ham and eggs as you idly sit and watch the world go by

  • 4 oz. (125g) minced cooked ham
  • 2 hard boiled eggs
  • 2 oz. (50g) breadcrumbs
  • 2 tablespoons of flour
  • salt and pepper
  • oil for frying
  • 1 egg, beaten
  • 1 teaspooon finely chopped parsley

    Cooking Instructions:
    1. Chop the eggs very finely and mix with the ham, flour and breadcrumbs
    2. Add the seasoning and parsley, then bind with the beaten egg
    3. Shape the mixture into flat, round cakes and fry in a little oil until golden brown on both sides
