Lobster Patties


Description/Notes:

Scrumptious sea-food patties in mouthwatering flaky pastry cases

Ingredients:
  • 8 oz. (225g) flaky pastry
  • 1 medium can lobster
  • quarter pint thick white sauce
  • 1 tbsp. Cream
  • pinch of paprika
  • 1 tsp. chopped parsley
  • salt and pepper
  • beaten egg to glaze
  • squeeze of lemon juice

    Cooking Instructions:
    1. Pre-heat oven to 450F ,Gas Mark 7
    2. Roll pastry thinly and cut into 3 inch (7.5 cm.) rounds
    3. Line some fairly deep patty tins with half the rounds
    4. Add the chopped lobster to the white sauce, cream, lemon juice, seasonings and parsley
    5. Put a spoonful of the mixture into each patty case, moisten the edge of the pastry and put another round on top, pressing the edges well together
    6. Crimp the edges and make a hole in the top of each patty with a skewer and brush over with a little beaten egg
    7. Bake for about 20 minutes in the pre-heated oven
