Corn Fried Chicken

Serves 2-4


No safari would be complete without these tasty nibbles, not even to the local park

  • 4 chicken joints
  • 1 egg, beaten
  • 4 tablespoons browned breadcrumbs
  • 3-4 tablespoons of corn oil
  • 1 tablespoon of seasoned flour

    Cooking Instructions:
    1. Pre-heat oven to 375F, Gas Mark 5, 190C
    2. Pour enough oil into s ashallow ovenproof dish to cover the bottom
    3. Place the dish in the pre-heated oven for 10 minutes to heat the oil
    4. Dip the chicken joints into the seasoned flour, then into beaten egg and breadcrumbs
    5. Place the joints in the hot oil and baste well
    6. Bake in the pre-heated oven for 15-20 minutes or until tender
    7. Place on kitchen paper to cool
