Crunchy baked chicken

Serves 2


Crunchy, munchy chicken for your outdoor expedition

  • 2 chicken quarters
  • 2 rounded tablespoons cornflour
  • 1 medium packet potato crisps
  • evaporated milk

    Cooking Instructions:
    1. Pre-heat oven to 350F, Gas Mark 4, 180C
    2. Rub the chicken quarters all over with salt
    3. Crush the potato crisps with a rolling pin on a sheet of greaseproof paper
    4. Dip the chicken quarters in the evaporated milk then coat evenly with the potato crisp crumbs
    5. Place skin side up on a baking sheet and cook in the pre-heated oven for 40-45 minutes
    6. Leave on kitchen paper to cool
