Sweetcorn Mustard Pickle

Makes about 1.25 lbs (550g) pickle

Description/Notes:

A quick and colorful microwave recipe for a delicious sweetcorn pickle

Ingredients:
  • 1 onion, chopped
  • 2 teaspoons of mustard powder
  • 1 teaspoon of curry powder
  • half a teaspoon of turmeric
  • half a teaspoon of salt
  • 2 teaspoons of flour
  • 6 oz. (150g) baby sweet corn, cut into half inch (1cm) lengths
  • 2 oz. (50g) thin green beans, cut into half inch (1cm) lengths
  • 1 oz. (25g) gherkins, sliced
  • 1 courgette, diced
  • quarter teaspoon root ginger, grated
  • 3 oz. (75g) granulated sugar
  • few black peppercorns
  • 6 fl oz. (170ml) pickling vinegar

    Cooking Instructions:
    1. Place the onion in a large bowl, cover and cook on Full, 100%, for one minute
    2. Mix mustard powder, curry powder, turmeric, flour and salt to a paste with two tablespoons of water
    3. Add to onion with the remaining ingredients and blend well
    4. Cook on Full, 100%, uncovered for 15 minutes, stirring every 5 minutes until mixture thickens
    5. Spoon into sterilized , hot jars then seal and label
