Stuffed Spud Surprise

Serves 4

Description/Notes:

Tasty variation on the versatile potato

Ingredients:
  • 4 baking potatoes, scrubbed
  • 1 oz. ( 25g ) margarine
  • 1 tablespoon milk
  • salt and ground black pepper
  • 14 oz. ( 415g ) can sausages in brine, drained and sliced
  • 7 oz. ( 175g ) can sweetcorn, drained
  • 1 oz. ( 25g ) cheddar cheese, grated

    Cooking Instructions:
    1. Pre-heat oven to 400F, Gas Mark 6, 200C
    2. Prick potatoes with a fork and bake in the pre-heated oven for about 1 hour
    3. When cooked, cool for 5 minutes, then cut in half length ways
    4. Scoop out center into a bowl and mash in margarine, salt and pepper and milk
    5. Stir sausages and sweetcorn into mashed potatoes and spoon into skins
    6. Sprinkle with cheese and return to oven for 20-25 minutes
