Lamb Kebabs

Serves 1 (500 calories)

Description/Notes:

Super kebab supper for one, ideal for that quiet night at home

Ingredients:
  • 7 oz. (200g) lamb leg steak, cut into bite sized pieces
  • 4 pickled onions
  • 8 button mushrooms
  • 4 bay leaves
  • 2 tomatoes
  • 4 oz. (125g) carrots
  • quarter green pepper, seeded and cut into squares
  • one and a half ounces (40g) long-grain brown rice

    Cooking Instructions:
    1. Thread the lamb, pickled onions, tomatoes, green pepper, bay leaves and mushrooms on to 2 kebab skewers
    2. Cook the carrots in boiling water and drain
    3. Boil the rice until tender
    4. Serve the kebabs with the carrots and rice
