Sweet and sour pork

Serves 1

Description/Notes:

Have a no-fuss Oriental meal without the hassle of leaving your home

Ingredients:
  • 4 oz. (100g) pork fillet
  • half an onion, thickly sliced
  • 1 ring pineapple, drained from a tin of pineapple in natural juices
  • half a green pepper, deseeded and thickly sliced
  • 1 tbsp. tomato ketchup
  • 1 tbsp. pineapple juice
  • 1 tbsp. Soy sauce
  • 1-2 tsp. cider vinegar
  • quarter tsp. Cornflour

    Cooking Instructions:
    1. Trim the fat off the meat and cut the pork into bite sized pieces
    2. Dry-fry the pork, pepper and onion for 5-6 minutes then add the pineapple and warm through
    3. Whisk together all the other ingredients and add to the pan
    4. Bring to the boil and simmer for 3-4 minutes
    5. Serve with a baked potato or brown rice
