Cauliflower Cheese

Serves One

Description/Notes:

Try this tasty, low calorie version of an old favorite.

Ingredients:
  • Half a cauliflower
  • 5 fl oz. (150 ml) white sauce (see low-calorie white sauce recipe)
  • half a teaspoon of Dijon mustard
  • 1 oz. (25g) Cheddar cheese
  • salt and freshly ground black pepper

    Cooking Instructions:
    1. Prepare the cauliflower, removing outside leaves and thick stalk
    2. Boil in salted water until tender
    3. Drain and arrange in a warmed heatproof dish
    4. Make the sauce, adding the mustard and three quarters of the grated cheese
    5. Pour the sauce over the cauliflower and sprinkle the remaining cheese on top
    6. Brown under a hot grill
