Crunchy cod and mushroom bake

Serves 4

Description/Notes:

Once in the oven, this super supper dish will look after itself while you entertain uyour guests

Ingredients:
  • 1 lb. (450g) cod fillets
  • 4 oz. (100g) mushrooms, thinly sliced
  • juice of one lemon
  • pinch of mixed dried herbs
  • half an onion, finely chopped
  • salt and pepper
  • 2 slices toasted wholemeal bread

    Cooking Instructions:
    1. Divide the fish into four portions and place in a shallow casserole
    2. Cover the fish with the onions and mushrooms then pour in the lemon juice
    3. Sprinkle the herbs over the dish and season with salt and pepper
    4. Cover with foil and bake in a pre-heated oven 350F, Gas Mark 4, 180C for 30 minutes
    5. Remove the foil then sprinkle the toasted bread over the dish
    6. Cook for a further 10 minutes then serve with baked potatoes and courgettes
