Mini Pizzas

Serves 3-6

Description/Notes:

Wholesome mini pizzas that won't break the calorie bank.

Ingredients:
  • 1 onion, chopped
  • 3 oz. (75g) kidney beans, roughly chopped
  • 3 tomatoes, skinned
  • 6 green olives, pitted
  • one and a half ounces (40g) Edam cheese, grated
  • 1 tblsp. olive oil
  • 2 tsp. dried mixed herbs
  • 1 tsp. dried oregano
  • ground black pepper
  • pinch of garlic salt
  • 3 soft wholemeal rolls, halved

    Cooking Instructions:
    1. Fry the onion in the olive oil and add the herbs and garlic salt
    2. Mix in the tomatoes, olives and beans then cook for about 10 minutes
    3. Toast the outside of the rolls then spread the mixture evenly between them and season with salt and pepper
    4. Place on a baking tray, sprinkle with the grated cheese and cook under the grill until golden and bubbling
    5. Serve as a finger buffet or with a side salad and coleslaw
