Recipe: Sweet and Sour Cod

Delectable fillet of cod in a sensational sweet and sour sauce

Ingredients:

  • 2 lb. (1kg) cod fillets, skinned and cut into bite sized pieces
  • 8 oz. (225g) shelled prawns
  • 2 onions, sliced
  • 10 fl. oz. (300ml) chicken stock
  • 1 tablespoon tomato puree
  • 3 tablespoons white wine
  • 1 teaspoon of ground ginger
  • 3 oz. (75g) cornflour
  • 3 fl. oz. (75ml) cooking oil
  • 4 celery stalks, sliced
  • 1 red pepper, desseded and sliced
  • 1 tablespoon (15ml) chopped fresh chives
  • salt and pepper
  • 3 fl. oz. (75ml) cooking oil
  • Cooking Instructions:

    1. Mix the tomato puree, soy sauce, wine, ginger and half the stock together
    2. Add the cod pieces and prawns, then marinade at room temperature for 1 hour
    3. Drain and reserve the marinade
    4. Roll the cod pieces and prawns in the cornflour, reserving 1 tablespoon of cornflour
    5. Heat the oil in a frying pan, add the cod and prawns and fry for 8-12 minutes or until fish is cooked and flakes easily
    6. Transfer to a plate and keep hot
    7. Add the vegetables, chives and seasoning to the pan and fry for 3 minutes
    8. Add to the fish
    9. Mix the remaining cornflour with the remaining stock and add to the pan
    10. Bring to the boil, stirring constantly
    11. Gradually stir in the reserved marinade and simmer for 3 minutes
    12. Stir the fish and vegetables into the sauce and reheat gently
