Trout with Almonds

Serves 2


Terrific trout with tasty almond pan juices

  • 2 x 8oz (225g) trout, cleaned
  • 1 oz. (25g) blanched almonds, flaked
  • 1 oz. (25g) seasoned flour
  • 2 tablespoons of lemon juice
  • 3 oz. (75g) butter

    Cooking Instructions:
    1. Coat the trout with the seasoned flour
    2. Melt 2 oz. (50g) butter in a large heavy-based frying pan
    3. Add the trout and fry, turning once for about 12 minutes or until cooked and golden brown
    4. Drain and keep warm on a serving dish
    5. Add the remainder of the butter to the pan and when melted, add the almonds
    6. Cook for 2-3 minutes or till lightly browned then add the lemon juice
    7. Pour the pan juices and the almonds over the trout , garnish with lemon and serve
