Plaice Mayonnaise

Serves 4


A delicious plaice salad that's great to serve with new potatoes or warm crusty bread

  • 2 plaice, skinned and filleted
  • 3 oranges
  • lettuce heart
  • salt and pepper
  • juice of 1 lemon
  • butter
  • paprika
  • French dressing
  • orange mayonnaise

    Cooking Instructions:
    1. Season the plaice fillets with salt, pepper, lemon juice and the juice of half an orange
    2. Add a little finely grated orange rind and roll the fillets from head to tail
    3. Place the fillets in a buttered ovenproof dish, arranging them so that they will not unravel
    4. Dot with butter and cover
    5. Place in the center of a moderate oven (350F, Gas Mark 4, 180C); leave to get cold
    6. When cold, drain , place on a dish, coat each roll with some of the orange mayonnaise, then garnish with a sprinkling of paprika
    7. Remove the peel from the remainder of the oranges and slice the flesh
    8. Dip the orange slices in French dressing and arrange them on a lettuce border surrounding the fish
    9. Serve immediately
