Rosemary Grilled Red Mullet

Serves 4

Description/Notes:

Tasty red mullet giving you lean cuisine that's good for you and great for barbecues

Ingredients:
  • 4 x 10 oz. (275g) prepared red mullet
  • 2 oz. (50g) margarine
  • 2 teaspoons fresh rosemary or 1 teaspoon of dried rosemary
  • 1 tablespoon polyunsaturated oil
  • 1 lemon, grated rind and juice

    Cooking Instructions:
    1. Melt the margarine in a saucepan, add the oil, lemon rind, juice and rosemary
    2. Remove pan from heat
    3. Preheat the grill to a high setting
    4. Thoroughly coat mullet in sauce and stand for a few minutes
    5. Grill one side of the fish for a 3-4 minutes , turn, and repeat on the other side
    6. Serve hot with any remaining sauce and a crisp, green salad
