Herby Cod Surprise

Serves 4

Description/Notes:

Delicious cod dish that would taste good with a jacket potato

Ingredients:
  • 4 pieces of cod fillet, about 5oz. (150g) each
  • 1 medium onion, skinned and chopped
  • 2 level tablespoons tomato puree
  • 1 level tablespoon of chopped parsley
  • 1 oz. (25g) butter
  • 4 fl. oz. (100ml) water
  • salt and pepper
  • half a level teaspoon of dried mixed herbs

    Cooking Instructions:
    1. Melt the butter in a saucepan and fry the onion gently for about 3 minutes to soften it
    2. Mix in the water, tomato puree and mixed herbs
    3. Season with salt and pepper to taste, stir and bring to the boil
    4. Place the cod fillets in the pan on top of the onion mixture
    5. Cover the pan with a lid and simmer for about 20 minutes, until fish is tender
    6. Scatter parsley on top and serve
