Lemon Glazed Chicken

Serves 6

Description/Notes:

Luscious chicken portions with a tangy lemon glaze

Ingredients:
  • seasoned flour
  • 6 chicken portions
  • 3 oz. (75g) butter
  • half a level teaspoon salt
  • parsley
  • 3 tablespoons of oil
  • 3 tablespoons lemon juice
  • 2 level tablespoons finely chopped onions
  • 1 level teaspoon black pepper
  • pinch of dried thyme

    Cooking Instructions:
    1. Wipe the chicken portions and toss in the seasoned flour
    2. Melt the butter in a shallow baking dish which will take the chicken portions without overlapping
    3. Place the chicken portions skin-side down in the fat and cook just above the center of a moderate oven (350F, Gas Mark 4, 180C) for 25 minutes then turn and cook for a further 25 minutes
    4. Blend together all the other ingredients for the glaze
    5. Spoon the glaze over the chicken and continue to cook for a further 15 minutes, basting once during this time
    6. Test the chicken to make sure the flesh is tender
    7. Serve with a little of the glaze and a garnish of parsley
