Chicken Risotto Parcel

Serves 1


Beautifull baked chicken in a tasty rice parcel

  • 1 chicken joint
  • 1 oz. (25g) mushrooms, sliced
  • 1 tomato, skinned and sliced
  • one and a hlf tablespoons of cooking oil
  • one and a half ounces (38g) long-grain rice
  • 6 tablespoons of chicken stock
  • salt and pepper

    Cooking Instructions:
    1. Pre-heat oven to 400F, Gs Mark 6, 200C
    2. Wipe the chicken joint
    3. Heat the oil and brown the joint all over
    4. Butter a large piece of foil and arrange the mushrooms and tomato in the centre with the rice
    5. Turn up the foil at the edges. Pour the stock over, season with salt and pepper and mix lightly with the rice
    6. Place the chicken on the rice mixture, then fold the foil over the top, sealing the edges ssecurely
    7. Place on a baking tray and heat in the top of a pre-heated oven for about one hour
