Devilled Chicken

Serves 4


Luscious chicken joints in a magic marinade

  • 4 chicken joints
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 tablespoon (15ml) soy sauce
  • 2 tablespoons sweet chutney
  • 1 teaspoon French mustard
  • Tabasco sauce, couple of drops
  • 1 teaspoon demerara sugar
  • half a teaspoon of ground ginger
  • salt and freshly ground black pepper

    Cooking Instructions:
    1. Trim the chicken joints and remove the skins
    2. Make deep cuts in the meat (to the bone) so that the marinade can penetrate
    3. Place the joints in a shallow dish
    4. Mix together the rest of the ingredients to form a marinade
    5. Spoon the marinade over the chicken joints and leave for at least 2 hours, basting occasionally
    6. Place the chicken joints under a pre-heated grill and cook for about 15 minutes on each side, brushing occasionally with the remaining marinade
