Honey Raisin Fingers

Makes about 18 biscuits

Description/Notes:

Finger licking, yummy honey biscuits.

Ingredients:
  • 6 oz. (175g) clear honey
  • 6 oz. (175g) flour
  • 3 eggs
  • 3 oz. (75g) butter
  • 6 oz. (175g) raisins
  • 4 oz. (125g) chopped nuts
  • 1 tsp. (5 ml) baking powder

    Cooking Instructions:
    1. Pre-heat oven to 350F, Gas Mark 4, 180C
    2. Grease a 12 inch (30 cm) X 9 inch (23 cm) shallow baking tin
    3. Beat the butter and honey together until soft
    4. Sift together the flour and baking powder
    5. Fold in the butter mixture and the raisins and nuts
    6. Press the mixture on to the baking tin and bake in the pre-heated oven for 30 minutes
    7. Remove from oven when firm and golden brown
    8. cut into about 18 biscuits
