Frosted Caramel Squares


Description/Notes:

Delectable caramel squares with a heavenly meringue topping

Ingredients:
  • 6 oz. (150g) plain flour
  • 4 oz. (100g) castor sugar
  • 4 oz.(100g) butter
  • 2 eggs
  • 3 oz. (75g) soft brown sugar
  • 4 oz. Mixed chopped nuts
  • 1 rounded teaspoon of baking powder
  • pinch of salt
  • half a teaspoon of vanilla essence

    Cooking Instructions:
    1. Pre-heat oven to 325F, Gas Mark 3, 170C
    2. Cream together the butter and caster sugar
    3. Beat together 2 egg yolks and the white of one egg
    4. Add to the butter and sugar and beat well, then add the vanilla essence
    5. Blend in the sifted flour, salt and baking powder
    6. Spread the mixture in a greased baking tin to a thickness of about a quarter inch (6mm)
    7. Sprinkle with chopped nuts
    8. Beat the remaining egg white until stiff then add 3 oz. (75g) soft brown sugar
    9. Spread the meringue on top of the nuts
    10. Bake in the pre-heated oven for 20-25 minutes
    11. When cool gently cut into squares
