Meringues

Makes 8-12

Description/Notes:

Light and fluffy treats that melt in your mouth

Ingredients:
  • 2 egg whites
  • 4 oz. (100g) caster sugar
  • double cream, whipped

    Cooking Instructions:
    1. Pre-heat oven to 210F, 100C
    2. Grease a baking tray
    3. Whisk the egg whites until stiff
    4. Add half the sugar and continue beating
    5. Fold in the remaining sugar
    6. Place spoonfuls of the mixture onto a baking tray
    7. Bake in the middle of the pre-heated oven for two and a half to three hours
    8. When cold, place into pairs and sandwich together with double cream
