Coffee Slices


Enjoy the coffee and almond taste of these super slices

  • 4 oz. (100G) castor sugar
  • 3 oz. (75g) ground almonds
  • 2 oz. (50g) ground rice
  • whites of 2 eggs
  • 1 tsp. coffee essence
  • 1 oz. chopped almonds
  • 1 rounded teaspoon of baking powder

    Cooking Instructions:
    1. Pre-heat oven to 275F, 135C
    2. Beat the egg whites till very stiff
    3. Sift together the sugar, ground rice, ground almonds and baking powder
    4. Fold in the egg whites and the coffee essence
    5. Put the mixture into a forcing bag and pipe out finger lengths on to a greased and floured baking tray
    6. Sprinkle over the chopped almonds
    7. Place in the oven for about one hour
    8. When cold, place in pairs and sandwich together with coffee butter cream
