Red Kidney Bean And Onion Salad

Serves 4

Description/Notes:

Serve this salad as an accompaniment to all barbecued meats, fish and chicken.

Ingredients:
  • 8oz. red kidny beans
  • pinch of bicarbonate of soda
  • 1 clove of garlic, peeled and crushed
  • 1 large onion, peeled
  • 1tbsp. vinegar
  • 3tbsp. salad oil
  • salt and pepper

    Cooking Instructions:
    1. Soak the beans overnight in cold water and the bicarbonate of soda
    2. The following day transfer the beans and the liquid into a large saucepan
    3. Add a quarter pint (125ml) cold water, bring to the boil and simmer gently for one and a half to two hours, making sure the beans do not break up
    4. Drain and put into a basin
    5. Cut off 2 slices of the onion for garnish and roughly chop the rest
    6. Place the garlic into a bowl and add the vinegar, oil, salt and pepper
    7. Mix well and pour over the hot beans before adding the chopped onions
    8. When the dish has cooled a little garnish with onion rings
