Baked Bananas


The coconut and oranges give a really tropical taste to this banana pudding.

  • 6 bananas, peeled and halved lengthways
  • 3 tbsps. brown sugar
  • 1 teacupful orange juice
  • 1 breakfastcupful desiccated coconut
  • whipping cream

    Cooking Instructions:
    1. Place the bananas side by side in a buttered ovenproof dish and pour the orange juice and sugar over them
    2. Sprinkle with the dessicated coconut and bake in a moderate oven for ten minutes
    3. Serve hot with the whipped cream
